		<description>The basis of your article, saying &quot;who cares&quot; is bad and I will tell you why. If you know anything about pisco you would understand how vastly different a Chilean pisco is to a Peruvian pisco. Don&#039;t just publish stuff like this without knowledge regarding the difference of the spirits. Give some facts and data about the products before blanketing the issue of origin or distillation style.  

As far as the history of the Pisco Sour, well that is a very well documented story. The Pisco Sour was invented by an American expatriot bartender named Victor Morris who is originally from Salt Lake city.  He moved to Lima in 1919 and opened the Morris Bar in Lima Peru.  He invented the pisco sour which became a local favorite. The Morris Bar guestbook exists today and it is full of comments on the Pisco Sour and the guests who loved it.

Please NOTE the difference between pisco sour styles too.  To say that it does not matter if there is eggwhite int the cocktail is naive.  The eggwhite and the bitters is part of the magic behind a good tasting pisco sour. In Chile they generally don&#039;t use an eggwhite and the cocktail is very different therefore.  Maybe this is why Anthony Bourdain did NOT like the pisco sour when he went to Chile to film his show &quot;NO Reservations.&quot;  My Chilean friends agree that the egg white makes a huge difference in taste.

Most importantly note the difference in products, a quick review for you - do your own research too.  Chilean pisco = aged therefore the color, multi-distill, additives, 2 or 3 grape varieties, stronger alcohol content.  Peruvian Pisco = unaged, single distill to proof, no additives, 8 different available varieties, always between 80 and 84 proof.

I don&#039;t mean to sound harsh but don&#039;t toss the baby under the bus. There are many people who are very passionate about their country&#039;s pisco so give credit where it is due.

I am NOT hating on Chilean pisco, is it a very different product which deserves its own appreciation. They have good piscos as well. Salud.
